Pilot Study 24: Legumes Value Chain in Hungary

The Legumes Living Lab Hungary, led by Agri Kulti, includes 17 farmers, research partners, restaurants, seed retailers, consumer associations, and public entities. This pilot study aims to assess the short value chain of legumes in Hungary, from seed to fork, focusing on the drivers and obstacles to legume uptake. Despite low legume consumption in Hungary compared to Europe, emerging trends make this an ideal time to evaluate the value chains and ecosystem services (ESs) provided by legumes, particularly cultural and economic ESs.

Objectives:

  • Assess the short value chain of legumes in Hungary, from seed producers to consumers.
  • Measure cultural and economic ecosystem services of legumes.
  • Identify the drivers and obstacles to legume uptake across the value chain.

Specific Objectives:

  • Compile a report assessing the current state of the short value chain of legumes in Hungary and share findings at a multi-actor validation workshop.
  • Collect economic data from seed producers and retailers.
  • Gather agronomic and cultural data from farmers in the Living Lab.
  • Map home-grown legume retailers in Hungary.
  • Collect data from restaurants, chefs, and consumers to understand needs and preferences.
